Canning Chocolate Cake

It is so easy to prepare a chocolate cake mix and have it stored on your shelf or in food storage to bake at a later date.  For a long time, I was buying prepackaged chocolate cakes and storing them.  Now I have found that I can store much more if I package all the dry ingredients myself.  I have stored them in two different ways:  I can the mix (Which makes WONDERFUL gifts if you decorate the quart jar and add a tag for the instructions), and I vacuum seal the mix.  I prefer to vacuum seal the mix because it takes up less storage space.  I keep a five gallon bucket in the pantry, and as I package the cake mix up, I put it in the bucket.  Once the bucket is full, I seal it and put it in our food storage pantry.  I have not found any documented facts on how long you can keep these in food storage.  I have used these mixes up to two years after I stored them with no problems, however, I personally wouldn’t go beyond two years.
Here are the ingredients to make one cake mix that will fit into a one quart jar, so you can easily make a gift for those you love.  Afterwards, I have included the recipe to make 5 cakes for your food storage.  You can package more than 5 at a time if you so choose.
Ingredients for one scrumptious chocolate cake:
  • 1 1/2 cups sugar
  • 2 cups of all-purpose flour
  • 3/4 cups black cocoa
  • 2 teaspoons of baking soda
  • 1 teaspoon of baking powder
  • 1/3 cup powder milk
  • 1/2 cup freeze-dried raspberries (optional)
Directions:
Combine flour, baking soda/powder, and salt in a large bowl and mix.  Pour this into the bottom of a one quart wide mouth mason jar and tap gently so the mix packs to the bottom.  Next, pour the sugar on top and tap the jar again to pack it evenly.  In a bowl, mix together the black cocoa and powdered milk, and pour into jar and tap gently again.  If you choose to add the freeze-dried raspberries, then press these down on top.  Place lid and ring on jar.
Decorative ideas:  One way I like to decorate my mason jars when giving them as a gift, is with a simple piece of fabric, based on the reason or the season.  You place the fabric on top of the lid and use a thin, tight-fitting rubber band to secure it in place and then tie a ribbon around it to cover the rubber band.  Add your pre-made label to the ribbon at this time before you tie it.  Another way is to place the fabric over the lid and screw the ring down around it. Labels or directions for each vacuum sealed package should read:
To make this cake:  Preheat your oven to 350° F.  Grease and flour a 9×13 cake pan.  In a large mixing bowl, pour your cake mix, and blend ingredients.  Add 1/2 cup vegetable oil, 2 beaten eggs, 1 & 3/4 cup warm water, and mix until blended.  Pour into your cake pan and cook for 35 minutes or until cake springs back in the center.  Cool your cake completely before frosting. Invite friends over and enjoy!!
Ingredients for 5 scrumptious chocolate cakes:
  • 7 1/2 cups of sugar  (There are about 2 cups of sugar in a pound)
  • 10 cups of flour (There are about 3 cups of flour in a pound of Gold Medal all purpose flour)
  • 16 oz black cocoa (This is the size of one can of black cocoa powder I buy)
  • 5 tsp baking powder
  • 10 tsp baking soda
  • 1 & 2/3 cups powdered milk
  • 2 & 1/2 cups freeze-dried raspberries, optional (1/2 cup per package)

Cake Mix for Food Storage and Recipe!

If you are like me and enjoy something sweet every now and then, you might want to consider adding some cake mix to your food storage.  Some people may think this is a frivolous item, but some good easy to cook comfort foods may come in handy to help keep everyone sane.  Plus, I believe in prepping what you eat and eating what you prep.  This is the surest way to have a store of food that you know how to cook, like to eat, and will eat.  This also means that you are rotating your food and using it.
There are lots of things that you can make with cake mix.  You can makecake pops, you can make cupcakes, you can make cake mix cookies, you can make cake batter waffles, and you can use cake batter to turn simple popcorn into a delightful dessert.  No oven?  No electricity?  You can make cake batter pancakes topped with some warm frosting (cause nothing goes better with cake batter pancakes than more sugar) with a frying pan over a wood stove or even a fire.  You can also use it to help outcornbread, and you can make brownies with chocolate cake mix.
As you can see its a very versatile item to add to your rotation.  Anytime I can find something like cake mix, that has many uses, and that stores well, its a no brainer to add it to my food rotation.  You can safely keep a 1-2 year supply on your shelves and rotate them or you can stick them in long term storage for perhaps up to 5 years.  There are two main approaches you can take to cake mix.
You can buy it in the box.
For the most part I will buy mine in the box.  I wait for there to be a couple of coupons then I wait for the mixes to go on sale somewhere, ideally for .89 to .99 cents a box, then I apply the coupon which knocks at least half of that off.  I will buy as many as I have coupons for.  At .50 cents a box, you might be able to beat that by making your own mix, but not by much once you count for all the ingredients.  Now if you cannot get the price per box down that low, you may want to consider making the mix from scratch.
For those of you out there who are gluten free, Betty Crocker has several different types of gluten free boxed cake mix, as do several other different companies – but you guys are going to save the most money by making the mixes from scratch as food companies are still charging a premium for gluten free food.  Click here for a simple GF Yellow Cake Mix recipe.
I already have the dried ingredients needed for these mixes stored, if you don’t already, you will want to plan on picking up some egg powder, and powdered milk for your storage.  Some people add these ingredients to the mix prior to storage so when it comes time to cook it, all they have to do is add water and butter.  If the mix calls for butter or oil you can do a few things, you can either make sure you have enough butter and oil stored to get you through a disaster, you can add powdered butter or margarine to the mix, OR you can sub out the butter or oil for a bean puree.
Now before you wrinkle your nose, I have done this several times to make cakes a little more healthy and/or to make them vegan for friends of mine and it has tasted JUST FINE.  Really!  In a long term emergency, replacing butter or vegetable oil with some (soaked and cooked) bean puree, in cake mix will save that precious resource for other uses, it will also increase the amount of protein in the cake mix making even more useful in a situation where protein might be a luxury.  The amount of beans you would want to add is about 1/2 cup of bean puree per box maybe a tad more.  That is just about a can of beans, drained and rinsed and pureed.  Think black beans for chocolate cake and white beans for yellow cake.

Or you can make it from scratch.
Learning how to make cake mix yourself is a good thing to do whether your are storing it or not.  It’s another exercise in self sufficiency and your end product will inevitably be more healthy than the store bought version.  Plus, in a long term disaster, you will eventually run out of pre-made mix, and if you want cake, you will have to know how to make your own from scratch.
THE MIX (this is based on Everyday Food Storage’s recipe for yellow cake mix but I made a few modifications to make it work for me, keep in mind cake made from scratch will have a slightly different texture than the store bought stuff):
  • 9 Cup flour total - If you are milling your own flour  from wheat berries you will want to reach for somesoft winter wheat as you want the lower protein content of that type of wheat for cakes; you will also want to mill it a tad more fine than all purpose flour but you don’t want it so fine that you make something like wheat starch.  If you are not milling your own flour, you can use 9 cups of pastry flour (which is almost just like cake flour but not bleached) or 9 cups of all purpose flour with one tablespoon of flour out of every cup replaced with a tablespoon of corn starch)  OR you can just use cake flour (I am not a huge fan of cake flour because it is bleached and so refined and, therefore, not real good for you but it does really make the best cakes).
  • 6 Cup sugar – just regular sugar
  • Heaping 2/3 Cup dry non-instant milk powder or 1 1/3 C. dry instant milk powder
  • Heaping 1/4 Cup baking powder
  • 4 tsp salt
  • 1 tsp vanilla powder – I have found that vanilla powder is a little easier to  incorporate into baking mixes for storage.
  • 1 1/3 Cup dry egg powder (this assumes the egg powder ratio is one large egg = 2 Tbs dry egg powder + 1/4 Cup. water, if your brand of egg powder is different you will have to adjust the recipe).
Combine ingredients thoroughly and store in an air tight container.  You can mix this up – freeze it a couple of times to kill any dormant bugs in the flour and seal it in a Mylar bag with an oxygen absorber.  Don’t forget to write the type of cake mix and the cooking instructions on each package.  Or you can mix it up as you need it, if you are already stocking all the ingredients.
USING THE MIX:
  • 4 1/3 Cup  yellow cake mix (make it a heaping 4 1/3 Cup if you used instant milk powder)
  • 1/2 Cup softened butter or bean puree
  • 1 3/4 Cup  water
  • 1 tsp vanilla (or 1/2 tsp of vanilla powder)
Heat oven to 350 degree F.  Grease bottom and sides of 9×13 pan, two 9×9 pans,  or two 8×8 round pans.  Beat all ingredients with electric mixer on low speed for 30 seconds, then beat on high speed 3 minutes.  Pour into prepared pans and bake 9×13 35-40 minutes, 9-inch 25-30 minutes, 8-inch rounds 30-35 minutes or until toothpick inserted in center comes out clean.

Everyday Food Storage suggests these variations:  Add 1 Cup freeze dried fruit hydrated in the 1 3/4 Cup water to make it fruit flavored.  OR my variation: add some fruit jam which you made yourself in-between the layers of cake! You can also experiment with adding jello or kool-aid to flavor and color your cake mix.

Super Easy Jams and Jellies with two Recipes

The art of Jam and Jelly making is an important part to your journey of self-reliance.  It is important for preppers to learn this skill because it is a superb way to preserve fruit.  While there is a lot of sugar in jam and jelly, there are also lots of vitamins and nutrients that are preserved too.  In hard times, sugar can be a good thing!  It’s a source of energy and its a morale lifter.  Canned jam and jelly does not require refrigeration and will last for years.  In a long term emergency situation, this would give you a great option for flavoring otherwise bland survival food.  You can put it on bread, rice, oatmeal, or heck – eat it with a spoon!
At first, Jam and Jelly making may seem a little daunting, but that’s just because its been so long since we’ve made it or watched someone make it, it’s really easy I promise you.  Once you make your own jam, you’ll find the fact you’ve been buying it at the store all these years horrifying.
In the process of making room in our freezer for beef this fall, I made some jam and jelly out of fruit I had stashed away since this last summer.  Fruit we grew or that we foraged, this is what I usually do with it.  Starting with frozen fruit is quite alright, in fact it helps, because as the fruit freezes it expands and breaks down a little, make it easier for you to mash up!
I took out all my berries, thawed them, then I measured what I ended up with and broke it up into “batches.”  Most batches will fill 4-6 half pint canning jars.  They don’t recommend doubling or tripling most jam and jelly recipes because you can run into trouble getting it to gel up.  Personally I double and triple batches all the time and have never had trouble getting a batch to gel, but it’s your call as to what you would want to do.  Remember a batch of jelly that doesn’t jelly up is syrup and completely usable as such.
If you are making jam, you mash the berries up over med-low heat on your stove and add a little lemon juice.  If you want to do jelly, you will either have to get one of those strainer bags (click here to find one online) where you add your mashed up fruit to the bag, let it sit over night to drain, or you can use a steam juicer to get the job done.   Either way, what you are after for jelly is clear, pretty, seedless, fruit juice.
4 Berry Jam Water Bath Canned

This is 4 berry jam.  Raspberries, Strawberries, Blueberries and Huckleberries.  Heat it up and add your sugar first.  Then, when it is completely dissolved in what they call a “boil that cannot be stirred down”,(usually in the midst of adding the sugar I will add the butter – this just keeps the foam down, there is nothing wrong with the foam it just doesn’t look as pretty) you add the pectin.  You’ll want to simmer it for about a minute longer, until you are sure your pectin is absorbed, but be careful not to scorch the liquid fruit. Click the heat off and skim any foam off the top – put it in a small bowl, it will gel up and you can eat it later.
Now I know you can use a “freezer jam” recipe with “freezer jam pectin” that doesn’t require cooking, but I prefer using “Classic Jam Recipes” that require cooking.  They usually turn out better, if you are going to can your finished product you need to cook the jam, and I feel like you have a little more control of the finished product.  Don’t be afraid of cooking your jam, its REALLY not that much more work.
This recipe is the Four Berry Recipe I use.  I can’t even begin to tell you how good this stuff is.  When I used to make jam and jelly with my grandma, I can remember it being good but really, if it wasn’t considered silly, I would’ve sat down and eaten a bowl of this with a spoon.  As it is now, I constantly make biscuits as an excuse to eat jam.

Four Berry Jam

  • 5 Tbsp Ball Classic Pectin
  • 1-1/2 cups sugar
  • 1 cup crushed huckleberries
  • 1 cup crushed blueberries
  • 1 cup crushed raspberries
  • 1 cup crushed strawberries
  • 1 TBS Lemon Juice
  • 1 Tsp of butter
At this point you can either stick it in containers to cool for the freezer, thereby making freezer jam…

**Or**

You can water bath can it!!  What a great first canning project this could be!  While it  is still nice and warm, ladle the jam into warm sanitized jars leaving 1/4 inch headspace (space between the rim and liquid jam).  Wipe the jar rim.  Fish your lids out of the boiling water and center lid on jar. Apply a clean band until fit is “finger” tight.
Place your jar into the water bath canner and rack so that the water covers up the jars by at least an inch.  PROCESS (boil) jars in your water canner for 10 minutes (don’t start your timer until the water has come to a full boil), adjusting for altitude (see the Ball Blue Book for an altitude chart).  When your timer goes off, remove the canner from heat, remove the jars and allowed to cool to room temperature undisturbed.  Check lids for seal after 24 hours. Lid should not flex up and down when center is pressed.

Raspberry Jelly

This was raspberry jelly.  I first juiced my berries with my steam juicer (click here to find on online).  Therefore I cheated.  I didn’t mash them up and let them sit in a bag overnight – I just cleaned them, put them in the juicer for an hour with water and ended up with beautiful, effortless, clear red juice.  The chickens cleaned up the berry pulp, as there is no reason to throw it out. If you don’t have chickens, cow, pigs, or goats to feed it to, then compost it.  Next, I added the lemon juice directly to the berry juice.
I so LOVE this juicer!  Perfect for jellies, juice, and in some applications homemade wine.  It works different than a centrifuge juicer, as the juice you get out of it is super clear and the naturally occurring pectin in the fruit is already activated (pectin is derived from fruit and most fruit contains some naturally).
The lemon juice helps preserve the color, clarity, and helps activate the pectin with its citric acid.  Lots of recipes don’t call for it any more.  I sill like adding it anyways.  This also gives your jam and jelly a good dose of vitamin C.  Then I basically reused the same process from above.  Adding the sugar and butter, dissolving it in a boil you can’t stir down then adding the pectin. All Love

Raspberry Jelly

  • 6 Cups of Raspberry Juice
  • 5 cups sugar
  • 8 TBS of Ball Classic Pectin
  • 1 TBS Lemon Juice
  • 1 Tsp of butter

Use the same water bathing process as the jam to can it.  Jelly must be canned, if you don’t, you have to stick it in the fridge and either use it until its gone, or you can cover the “headspace” in the jars with melted paraffin wax.  The wax method is NOT recommended for long term storage, because it does not create a vacuum like canning does.  Also, the wax can slip out of place exposing your jam or jelly to the air.  That being said, my grandmother used this method all the time and never suffered any ill effects over it.  In fact, I still have some of her jelly in my pantry that is going on 10 years old now that is sealed with wax and I am still eating it.  I would not hesitate to use the wax method if it was all that was available to me, but you need to do your research and make up your own mind as to what method you want to use to preserve fruit.

This topic often becomes controversial.  There seem to be many differing opinions out there regarding canning different types of food.  The bottom line is this:  When you can food you must make a choice whether you want to follow “age-old” advice or scientific data concerning safe heat levels food must reach in order to kill the lingering bugs and germs that are omni-present in today’s store bought food.  
This article presents well researched and heavily documented information regarding the baseline for how to can SAFELY.  None of what is presented is opinion other than the opinion that when you are preserving food for your family to eat, it is best to err on the side of absolute safety.

Getting your canning instructions and procedures from a random site on the internet (even ours) without referring to carefully tested and established guidelines, can be extremely dangerous and even deadly.  The ingredients used in foods today are not the same as they were 100 years ago.  Likewise, the contaminants and germs that store-bought food is exposed to is not the same it was 100 years ago.  Due to advances in the fields of microbiology, we are now better able to test foods for dangers than we were 100 years ago. Due to this, canning guidelines have changed. 
Where to can get Accurate, Safe, Time Tested, Food StorageInformation:
When I make food to put into storage I rely both on time proven methods and the science behind them. I will talk to real people who are more experienced than I - like my grandma, mother and aunts.  Master Preservers and Food Specialists are also a great resource for a question ornew recipes and can be reached through your localcounty extension officeor found by clicking here.  Most importantly, I also use trusted canning books like the Ball Blue Book as a reference and  the National Center for Home Food Preservation (USDA home preservation recommendations, recipes, and guidelines) to validate those methods.  While I don’t think those recommendations are “the law of the land”  most of them do have a very good scientific reasons behind them.  Every time I have read a recommendation that I disagree with and proceeded to research it myself I have discovered that they do in-fact, have good reasons behind them.

But I don’t trust the USDA.
Many people assume that USDA canning recommendations are in existence to keep people (like preppers)from storing their own food – in order to keep them dependent on the system.  While this line of thinking sells a lot of books, it is flawed as most of those “guidelines and recommendations” (and yes, even the USDA admits they are ONLY guidelines and recommendations) have been around longer than the term “prepper’ has and even longer than the first formal survivalist movements.  They exist because at one time our government did actually encourage people to can, garden, and make their own food to take the pressure off the ‘system’ so that more food and supplies could be sent to the war effort. This done so that ‘rationing’ wouldn’t hurt the average person so much.  Since they were encouraging people to can – they also took some responsibility for providing the public with information on how to do it safely.  
Thus, with some help from the industry (Ball, Kerr, and the manufacturers of pressure canners) the canning “guidelines and recommendations” as we know them today, were born. In the grand scheme of things, they have changed very little since then.  The changes that have been noticed (like the removal of a bacon canning recipe and a pumpkin butter recipe) to new information that has come in, from university and industry studies(not from the government itself, which has been unable to come up with any funding for new home canned goods research for decades).  In some cases recipes have been removed because of ‘lack’ of information.  In essence the guidelines were developed and centralized to help prevent people from killing themselves, especially people new to the practice at the time, and especially people who were more than one generation removed from the farm and garden, now living in city.

But why?
Now, with that being said – here are the top foods I see people trying to can that should NOT be canned,  not water bathed canned OR pressure canned, and certainly not oven-canned.  Here’s why (bear with me, I will try to explain everything in a down to earth way):
Botulinum Toxin

“Botulinum toxin is the most acutely toxic substances known, with a median lethal dose of about 1 ng/kg when introduced intravenously and 3 ng/kg when inhaled.  This means, depending on the method of introduction into the body, a mere 90–270 nanograms of botulinum toxin could be enough to kill an average 90-kg (200-lb) person, and four kg of the toxin, if evenly distributed, would be more than enough to kill the entire human population of the world.….Botulinum toxin has been recognized and feared as a potential bio terror weapon.”
That lethal.  Its odorless, tasteless and can have no visible appearance.  Immediate medical attention and a dose of anti-toxin is usually required to prevent death.  That’s why it’s such a big deal.  Food quality has improved  AND medical response time has also improved that’s why you rarely hear of Botulism poisoning cases anymore.  If you disregard this information, in a sense, you are trusting the same mega farms that brought you the salmonella egg poisonings and following egg recall in 2010 to bring you perfectly clean milk and butter.
Some people take even more short cuts with butter and water bath can it – or worse, can it in their ovenwhich guarantees that the temperatures won’t get high enough in the jar to kill the spores, increasing their risk.  Dry heat from your oven is slow to penetrate into jars and the recommended time is not long enough for the center of the jar to get up to temperature, the only way you can be certain it got up to temp is to break the seal and check which is counter productive to your efforts.  Water boils at  212° F near sea level and because of  the heating curve even if you increase the temperature on your stove the water NEVER gets any hotter, so water bathing your butter also will not bring it up to a temperature whereClostridium botulinum can be killed (this is why water bath canning relies more on acidity than heat to sterilize food).  
One way you can store butter for the long term is by ‘clarifying’ it first, when you ‘clarify’ butter you remove the dairy fats, making it more healthy and shelf stable – this is also called ghee. Prepared this way you can store butter for years.

Andress, National Director of Home Food Preservation, University of Georgia Department of Foods and Nutrition and Dr. Andress, a Professor and Extension Food Safety Specialist have recently commented ”the amount of heat that would have to be applied to kill harmful bacteria” would be “extremely detrimental to its quality.”  But it’s not just the taste and texture of the milk, Dr. Andress states, “milk is a finely balanced emulsion of proteins in water.  If the milk proteins are over-heated, they drop out of suspension and the milk separates” the visible separation is an indication that the same ‘life sustaining’ proteins of the milk are no longer intact defeating the purpose of canning milk.  Also, milk is a LOW acid food (see above explanation) and dairy fats can protect botulism spores from the heat of canning.  So if your milk somehow does have spores in it and you put it in a jar and seal it off from oxygen for an extended period of time at room temperature…..it can grow into one of the many strains of Clostridium botulinum, and produce an extremely lethal neurotoxin.

  • Pureed or Mashed Squash and Pumpkin and Pumpkin Butter: In purée form these two should not be canned, not water bathed or pressure canned.  However in cubed form it is safe to “pressure” can them.  Here is why: Pumpkin is a low acid food (low acid foods can support the outgrowth of C. botulinum) when pumpkin and squash are pureed it’s really thick (dense).  Through recent testing several universities have discovered that not even a pressure canner can produce enough heat to reliably penetrate the jar to the center of the purée, it is just too dense.  When pumpkin and squash are cubed and suspended in water the pressure canning process is reliable every single time.  The reason why canning purée pumpkin or pumpkin butter was recommended by the USDA and now it’s not, is because further testing was done which indicated that sometimes the pressure canning process worked and sometimes its did not, even with the addition of lemon juice the tests were still coming back with positive for Botulism spores (Source).  With one minor change to the process (using cubes and not a purée) it was 100% reliable so the recommended recipes for purée pumpkin and squash were withdrawn and replaced by cubed recipes.  This change was not made to annoy everyone it was made with our safety in mind.
  • Rice and Bread (and pastas): Adding rice, bread, or pastas to canned food recipes, like soups, is also not recommend.  Canning rice or bread or cake products straight is also not recommended.  It changes the density and increases the pH of the food, this may alter it to the point where you would not get adequate heat penetration to kill off the nasty bugs.  There is also the problem with these of ingredients expanding.  If you are canning with a jar that is flawed you run the risk of an exploding jar ruining your entire batch.  Food manufacturers produce canned soups with these ingredients with high temperature/pressure retort sterilization machines, but we do not have this capability for our home canned goods.  Canned cakes and breads are a favored item of the “anything can be canned” crowd.  Not only do they meet the botulism criteria of being moist and low acid, the airless center of the cake just doesn’t get hot enough to kill botulism that could get there a number of ways.  It doesn’t matter if the oven temperature is at 350 degrees; the internal temperature will not get anywhere near required 240 degrees for 30 minutes that is required for it to be safe.  Since rice, wheat, and cake mix store so easily dry – I recommend dry canning them (click here to read an article) for separate storage. Can make soups without rice and noodles – and simply add them later when you go to use the can of soap.
  • Eggs:  It is not recommended to can eggs at all. I know people who would fight me on this until their death, because, they claim they have found ways to make it ‘safer’ but here are the facts. Eggs are a low acid and a high density food.  Hard boiled eggs have a pH around 6.8, so it is possible for botulism to grow because the vinegar does not penetrate deeply into the egg.  You can, however, pickle eggs then refrigerate them and they will then last an unnervingly long time this way. There are no safe tested recipes for canning hard-boiled eggs, pickled or otherwise.  Food manufacturers get away with canning eggs because their capabilities are greater than what our home pressure canners can do – this isn’t a conspiracy it’s just a fact of life.  If you are wondering why pickled eggs can sit at a saloon out of the fridge and be safe, the answer is because saloon patrons usually eat the eggs within a couple of days.  When eggs are pickled, if some nasty bug survives in the middle of the egg away from the vinegar it will grow undisturbed at room temperature until the egg is eaten, the longer it sits at room temperature the more it grows. That is why it’s wise to refrigerate all pickled eggs. Now if you want to do your own research and part ways with the safety guides here that is up to you. Knowing what I know now about the science behind canning – I am sticking with the safety guides on this one.
  • Chili: Chili can be canned as opposed to the products above, but most chili recipes are only supposed to canned in pints jars, as in this recommended recipe here.   This is because chili is a low acid food, it is also very dense.  If you put it in a quart jar as opposed a pint jar the contents of the jar may be too dense for the temperature in the middle of the jar to consistently reach 240°F for 30 minutes, in another woods it could stray beyond our home pressure canner capabilities.You also should not change the recommended chili recipe to fit your families favorite recipe or to create a “survival chili” recipe.  I know this seems like a drag, but all the research that has been done on chili has been done on those specific recipes for chili – those acid levels, those density levels and ingredients, not on your families favorite chili recipe.  What “Research-Based” home canning means is: “The development of a canning recipe is an extensive process.  It involves repeating the entire preparation and canning process 15-30 times to obtain accurate heat penetration data.  Then, microorganisms are purposefully put into the jars before processing to make sure the processing time is sufficient to destroy them. This research must take place in a laboratory with equipment for testing heat penetration and microbiology. This is why processing times cannot be made up!  It’s also why a sealed jar does not mean it’s a safe jar,” (Lizann Powers-Hammond and Val Hillers WSU Consumer Food Safety)So while that doesn’t mean your families recipe is unsafe, it does mean that you will most likely never know for sure.UPDATE:  I did find a recipe for chili in the 2011 Ball Blue Book that included a recommendation for processes quart jars.  I trust that Ball (Jarden Home Brands) would not include an unproven recipe in their book – and I would have no problem following their recommendation as long as I did not stray from the recipe.

But I have been canning that for years and no one has gotten sick.
Many people say it must be safe to can because after all, they’re alive, aren’t they?  I can’t even count how many times I have heard or read someone saying, “I have been canning and eating ______ for years and never had a problem.”  That’s like saying “I’ve been driving my car for 10 years without a seat belt and have never gotten in an accident,” the day before you are thrown through your windshield on your way home.  Remember this:  Past performance does not guarantee future results.  Home canned food that could make your family members ill or even kill them when immediate medical attention is not available, is not a good survival tactic.
A good rule of thumb is if there are no recipes available in trusted canning guides, then either no tests have been done, or it has been tested and found unsafe.  I know it is frustrating to not be able to preserve something that you like inexpensively, but sometimes it is just better to go buy the powdered, freeze-dried or industrial shelf stable version to store.  I don’t want to scare anyone into not canning, home canning food is basically safe, as long as you follow the scientifically tested recipes and procedures.  When you deviate from those methods and directions you put yourself and whomever you feed at risk, how much risk is up to you.
So instead of blindly trying out random recipes that you read on people online – cross-check the recipes you find with the  Ball Blue Book, or The Complete Guide to Home Canning (the USDA guide) to see what similar recipes recommend for processing times.  If you can’t find a recipe, there MAY BE A GOOD REASON for that.  If you still have questions about using the recipe consult your local extension office. TIP:  Proper refrigeration of foods at temperatures below 3°C (38°F) retards the growth of Clostridium botulinum and most other bacteria.  The organism is also susceptible to high salt, high oxygen, and low pH levels (acidity).  The lethal toxin produced by the bacteria is rapidly destroyed by heat, such as in thorough cooking, but you need to bring it up to boiling temperatures.

*On a final note – I want to make it perfectly clear, that I have nothing against commercial farms or dairies, or their quality control standards. As they are strict and double and triple checked, but, humans error.  They also fill a need.   All the small farms in the US together would not be able to feed the American people alone it is not mathematically possible.  Demonizing mega farms will never achieve the goals of a safer, healthier food supply.  It is a problem that can only be solved by the consumer, not the government.
